How do you define a search to retrieve all read and unread posts for the last 7 days?

I don't think it's possible to do exactly what your asking as time is not a search option.
You can however read all of your unread posts by clicking the link in the top right hand corner of the main forum index.

Try doing a search without logging in.

Not logging in works only to a limited extent. If I'm logged in and read a post, that post gets marked as 'read'. It does not get returned in a later search of 'unread' posts, whether I'm logged in or not logged in.
What I'd like to do is be able to browse the subjects of all recent posts in all forums, and know that the list remains complete when refreshed.

If you want read posts to be considered unread, you would have to manually click the 'mark as unread' button after you've read your thread...

this may sound daft to you but as a newbie I get a list of several hundred posts unread. Is there some way of marking all posts unread so that I only pick up on NEW new posts? It seems I have to go into every forum to mark all posts unread.

A question is only daft when never asked.
If you wish to mark the posts read you will only pick up on the posts that hasn't been read since your last visit. There is a button on the page that lists all the boards in the forum, right above where it says who are currently online. The text on this button is Mark All Forums Read. This will make all the current posts in the forum appear as read. Any posts made after this will be considered new and unread (until you read them or mark them as read).
