When you take out the piece of interior trim situated behind the passenger seat, there is a rubber push down button which I think is wired up.
What is it/what does it do ??!!

No the opposite!!!! If you are upside down in a ditch, the inertia switch will have gone off automatically, so turning off the fuel pump. Once you get out of the ditch, right the car and wish to re-start it, then you press the inertia switch button to re-connect the power to the pump and reset the inertia switch.
The inertia switch also kills the fuel pump in the event of an impact accident, not just being upside down!
Hopefully you'll never get into that position.
