When the TomTom One 3rd edition was brought out, originally this function had been taken away, however later updates have added it back.
If you cannot get this to work, there is an application called TomTom Heaven Xplorer that hacks your TomTom to allow you to change the symbol. Use it at your own risk, I have not used it and am not recommending it.
