I may need to replace the thermostat on my Elan. I see the various threads about thermostats and how the Isuzu Impulse one will work but nothing about gaskets. Looking at Autozone's website they list gaskets for the Impulse (both inner and outer - didn't realize there was more than one). Will these work on the Elan ? Do I need both ?

yes, they will work. This part is just a guess, but I'd say you do need both. The inner one probably goes between the thermostat and the housing, and the outer would go between the stat and the outlet pipe. Like I said, that's just an educated guess.
My stat was just replaced when I had to replace a cracked outlet pipe, but i didn't do the work myself. I did get the new thermostat and gasket from Autozone, but I thought I only got one gasket. I could be wrong, though.

I swapped mine in about 2003. I reassembled with that orange instant gasket stuff and it has been fine ever since. I know I'm a cowboy, but these modern sealers are there to make your life easy right?

I would expect that in some cases, a liquid gasket would be better then a flat one. Liquid settles into gaps, which is ideal for surfaces which may be imperfect to start with.
