Is there any instructions or guides for replacing the hand brake cable on here ?

Yes there are: try the "Manuals" section at the top of this page. Once in there, and you need to get an access code first (follow instructions) you can get a pdf file of the workshop manual and other goodies. Well worth it.

I rang Paul in parts at Chris Neils and he has sent me a cable but when looking at the diagram on here it is showing 2 cables Chris Neils is shut now is it a case that I need 2 and are they both the same?

yes there are two cables one for each rear brake worth changing both at the same time done both on my car its a easy job.

If your cable broke but not because of corrosion, maybe you should look closely at the sliders as that might explain your other rear brake questions.
There are TWO cables. They are the same, so if you only broke one, your order from Chris Neals will get you driving again.
