I'm not sure if doing one pin at a time is feasible with the space available - and can't see the point in struggling, when it is not much more difficult to do both at the same time.
If you undo both bolts, you can slide the calliper off (keeping the hydraulic system attached). I then use a 5L paint can to stand the calliper on to support the pipework, and it gives enough flexibility to turn it around to get to both pins.
I use a pair of waterpump pliers to move the pins (if they are stuck!) - but you can swing a small hammer at them if needed. Once the stuck seal is broken, they should move with finger pressure - but whilst you're there, it's not much more effort to remove them, clean and regrease (silicone grease) and reassemble.
