I've decided to keep the original steering wheel, but have it re-wrapped in real leather by a local craftsman. Now how do I disconnect this orange plastic connector? After starring at it for an hour, and I do not want to damage it.

There is a FED SIR service notes document somewhere (can't remember if dapinky has it in the manuals section) and has illustrations showing those connectors. but in the meantime...
Make sure battery has been disconnected for a long time first, and do at your own risk.
The narrow side of that connector that is center of your photo: it's a little hinged locking tab that you pull up to release, and then you can pull the connector apart.

I did disconnect the battery, The long time part? Its been overnight. I can see on the narrow side, what looks like a round bar with a hinge looking tabs on each end.

Yes you need to remove the fuses/connectors & all.
Not difficult, you just need to follow the procedure and handle the airbag properly (not towards your head for instance). But the risk of it inflating for no reason is not really greater than when you drive in front of it anyway, right?
